Per preparare la treccia di sfoglia ricotta e spinaci dovremo iniziare dal ripieno: lessiamo gli spinaci in abbondante acqua salata e poi li frulliamo nel mixer fino a sminuzzarli molto finemente; in una ciotola mettiamo la ricotta, le uova e mescoliamo con una frusta fino ad ottenere una crema liscia e senza grumi, aggiungiamo gli spinaci e mescoliamo ancora, il parmigiano grattugiato, la noce moscata e poi assaggiamo e regoliamo di sale.
