Steps to make Cheesecake:
- En un cazo a fuego medio-bajo (10 min) calentamos los frutos rojos y 35 gr azúcar y guardamos.
- Las galletas las trituramos en el vaso de la batidora, no en polvo del todo.
- La mantequilla la derretimos en una sartén y a continuación echamos las galletas trituradas, mezclamos y tostamos un poco y guardamos.
- Echamos las 3 hojas de gelatina en agua fría por 4-5 minutos.
- Echamos un poco de nata (1/2 vaso) y lo calentamos 1 min en micro, para después echarle las hojas escurridas y que se mezclen y disuelvan fácilmente en el vaso con nata caliente.
- Varilleamos la nata restante (450 ml) hasta medio montarlas, sin llegar a montarlas, y vamos introduciendo los 125 gr de azúcar y seguidamente echamos el queso y el vaso con las gelatinas y terminamos de montar.
- Montamos en vasos pequeños: en el fondo un poco del caldo de los frutos del bosque, luego hasta casi llenar o unos 3 dedos de la mousse de queso (echamos con cuidado con una cuchara o con manga pastelera) y por último un poco de las galletas tostadas.
- Dejamos enfriar 1 hora en el frigo.
