  12. Take 30 gr frutta candita mista
  13. Prepare 10 gr gelatina

  17. Make ready 200 gr panna liquida

Instructions to make Pastiera Cheesecake:
  1. Per la base frullare i biscotti con la frutta secca e unire il burro sciolto,
  2. Con il composto foderare il fondo di una tortiera da 18/20 cm coperta con carta forno e porre in frigo per 1 ora
  3. Nel frattempo preparare la Cheesecake : Mettere il grano cotto, il latte e le zest del limone in un pentolino e far cuocere fino all’assorbimento del latte. A fuoco spento aggiungere il burro e far raffreddare il composto.
  4. In una ciotola unire la ricotta e il latte condensato amalgamandoli bene, aggiungere la cannella, la frutta candita ed integrare gli ingredienti
  5. Infine aggiungere il grano cotto raffreddato e la colla di pesce pre ammollata in acqua fredda poi sciolta in un paio di cucchiai di panna e mescolare bene
  6. Versare la Cheesecake sulla base dei biscotti e livellare la superficie, trasferire in frigo e farla riposare per 2/3 ore
  7. Nel frattempo preparare la ganache : portare a primo bollore la panna con il miele in un pentolino, spegnere il fuoco ed unire il cioccolato tagliato a pezzettini, lasciarlo in infusione 1 minuto poi emulsionare con una spatola di gomma, lasciarlo intiepidire e versarlo sulla cheesecake, e rimetterla in frigo nuovamente per 30 minuti
  8. Prima di servirla l’ho decorata con delle Crêpes Dentelle, dei biscotti in sfoglia
