- Cuci bersih buah mangga. Kupas. Pisahkan antara daging buah dg kulit.
- Rendam kulit mangga dlm air yg sdh dicampur garam. Rendam selama 15 menit. Angkat.
- Rebus kulit mangga dlm air mendidih sekitar 10 menit. Angkat, tiriskan, kemudian potong tipis supaya mudah saat memblender'y.
- Blender mangga beserta kulit'y sampai halus. Sisihkan.
- Campur semua bhn C, aduk² sampai rata, lalu saring. Masukkan dlm panci. Kemudian masak dg api kecil sambil diaduk. Setelah mendidih, aduk terus hingga adonan agak kental. Masukkan butter. Aduk² kembali sampai rata. Matikan api.
- Masukkan puree mangga. Aduk² sampai rata.
- Masukkan vla ke dlm plastik segitiga.
- Vla mangga siap digunakan utk filling kue soes/eclair & pie.
