  3. Puree your tomatoes and add 1 teaspoon of tomato paste. You can also grate your tomatoes
  4. In a saucepan put the oil and add the onions and start frying on medium high heat. To this add the cumin and curry powder and let the spices cook together with the onions until the onions turn golden brown
  5. Once the onions are golden brown add the tomatoes and tomato paste and stir to mix then cover and reduce the heat to low and simmer for 10 minutes
  6. After 10 minutes your onion and tomato mix should look something like this. The liquid from the tomatoes will have evaporated and the oils will have come through. Time to add the greens.
  7. Add the greens to the cooked tomatoes and stir to mix everything together
  8. Mix everything together very well then cover and let it cook on low heat for 15 minutes
  9. After 15 minutes the greens will look something like this. They should be cooked through but still crunchy (thats how we like it).
  10. Add the coconut cream to the greens and stir. Cover and let it simmer for a further 5 minutes and then remove from the heat. Your veggies are done!
  11. Serve hot and enjoy with ugali or as an accompaniment to any meal.
