- FILLING
- Wash the potatoes and then put them in a pan and cover with water ( note I did not peal the potatoes. You can if you want to. I take the skin off the potato after I cook it)

- Now take your cooked pealed potatoes and crumble them up or cut them up and put it in the mixture. Keep stirring constantly and cooking on medium high heat
- Keep stirring constantly on medium high heat and cooking for an additional 20 minutes (note the mixture will be thick)
- Set aside and let cool a little ( note you can make this mixture the night before and then fill the samboosa leaves the next day)

- For frying fry in olive oil till golden brown I use olive oil cause it is healthy and taste great
- You can bake it if you do not want to fry it just rub sides with olive oil and bake in oven on 350 Celsius until golden brown
- Remove and serve
