  1. Cuci bersih ayam dan potong"menjadi dua bagian (saya pakai keseluruhan sayap saya bagi menjadi dua dan potong lagi kecil". Lalu bumbui dengan jahe yg sudah di cincang, garam dan merica hitam. Diamkan selama 10 menit. Siapkan tepung kentang (potato flour/starch atau bisa juga dengan corn flour ya apabila tidak ada potato flournya)
  2. Lumuri ayam dengan tepung kentang/ corn flour sampai rata permukaan dgn tepungnya.
  3. Panaskan wajan dengan minyak goreng. Lalu satu persatu goreng ayam sampai berubah warna. Tidak perlu sampai coklat ya tuk awal penggorengan karna saya pakai cara double fry. Jadi stlh penggorengan pertama sisihkan lalu di goreng lagi sampai warna kecoklatan dan garing sekali kulit luarnya (cara ini supaya bisa tahan lama sampai keesokkan harinya pun ayam masih crunchy dan crispy) spt di gambar ya. Setelah itu goreng kacang tanah kupas sampai berubah warna kecoklatan sisihkan.
  4. Panaskan wajan dgn 2-3sdm minyak goreng. Kemudian tumis bawang putih cincang bersama cabai merah besar yg sudah di potong". Sampai harum dan layu lalu masukkan kecap asin, rice syrup, vinegar, cabai kering yg di tumbuk (optional) sampai berbuih lalu masukkan brown sugar aduk rata sampai menyurut ya sausnya, apabila msh terlalu cair masukkan cairan maizena sedikit demi sedikit terakhir masukkan kacang tanah. Sisihkan
  5. Campur ayam ke dlm saus sampai rata.
