- Cuci bersih ayam. Kerat ayam supaya rendaman susu dan bumbu meresap.
- Rendam ayam dalam susu (bahan marinasi basah), tutup wadahnya. Masukkan chiller, biarkan semalaman. (Bisa dimarinasi minimal 1 jam, tapi ayam akan lebih empuk alami jika direndam semalaman dalam susu)
- Setelah direndam semalaman, pindahkan ayam ke tempat lain. Tambahkan bumbu marinasi kering yg sudah dicampur jadi 1, aduk rata. Biarkan di suhu ruangan selama 1 jam.
- Setelah 1 jam, di wadah terpisah, campur semua bahan tepung basah. Aduk rata. Sisihkan terlebih dahulu
- Masukkan ayam ke dalam tepung basah. Aduk rata hingga ayam terlumuri adonan tepung basah.
- Masukkan ayam yg sudah dilumuri adonan basah ke dalam campuran bahan tepung kering (baluran). Lumur-lumuri ayam dan press ayam dg tangan sambil dicubit-cubit agar muncul keritingnya.
- Goreng ayam dalam minyak panas dengan api sedang hingga matang berwarna golden brown. Angkat. Tiriskan terlebih dahulu. Siap sajikan.
