- Potong ayam sesuai selera, marinasi dengan bawang putih halus, garam dan merica. Masukka kulkas selama 30menit.
- Siapkan bahan baluran: kocok lepas telur dengan garam. Sisihkan. Campur tepung sisihkan. Ambil ayam, lalu masukkan kocokan telur ke wadah berisi ayam, campur rata.
- Panaskan minyak, ambil satu persatu ayam yang sudah dibalur telur, balur kembali ke dalam tepung langsung goreng. Lakukan seperti itu sampai ayam habis. Ayam digoreng 2x. Sesi pertama goreng ayam sebentar saja sampai warna menguning. (Seperti gambar 1). Tiriskan sampai ayam dingin. Baru goreng kembali sesi 2 sampai ayam kecoklatan (seperti gambar 2). Tiriskan.
- Sementara menggoreng ayam siapkan bahan saus, campur dalam 1 wadah (kecuali bawang putih, minyak, madu)
- Tumis bawang putih cincang sampai kecoklatan, baru masukkan campuran saus. Masak sampai saus meletup, lalu kecilkan api, masukkan madu. Aduk rata masak sebentar, matikan api lalu masukkan ayam tepung, aduk sampai merata. Sajikan di piring, taburi dengan biji wijen.
