Instructions to make Mushroom Risotto (Risotto Jamur):
  1. Bersihkan jamur dan iris iris; cuci beras, tiriskan dan sisihkan.
  2. Panaskan 1 sdm mentega sampai harum dan mulai bening, masukkan pork belly atau pork bacon, setelah pork belly mulai matang, masukkan jamur dan masak sebentar sampai jamur setengah matang, lalu angkat jamur dan pork belly, namun sisakan minyak dan air dr jamur dlm pan sambil tetap dipanaskan
  3. Kecilkan api, lalu tambahkn 1 sdm mentega, tumis bawang bombay dan bawang putih sampai wangi dan layu
  4. Setelah bawang layu, masukkan beras ke dalam pan, aduk sebentar (sekitar 30 detik) sampai minyak dalam pan tampak melumuri beras lalu siram beras dengan ai. (Ingat ini harus dgn api kecil!)
  5. Aduk terus beras dalam panci, beri garam, blackpepper dan dried parsley. Saat air mulai habis menguap, tambahkan susu sedikit demi sedikit
  6. Terus aduk sampai susu mulai menguap dan terserap ke dalam beras dan tambahkan air sedikit demi sedikit (jgn berhenti mengaduk agar beras tidak melekat di pan dan gosong! Nanti nyesel loh!)
  7. Ulangi proses no.6 sampai beras matang. Sambil dicicipin. (Kalo kurang asin tambah garam atau penyedap rasa)
  8. Saat nasi sudah matang dan creamy, matikan api dan segera masukkan jamur dan pork belly yg sudah disisihkan, dan parmesan. Aduk2 dan sajikan. Siram risotto dengan 1sdm truffle oil, lalu taburkan irisan chives/ kucai dan peterseli, lalu sajikan.
  9. TIPS PENTING!!!!!: Jenis beras bisa mempengaruhi waktu yg dibutuhkan untuk matang, karena itu, cicipi beras sampai dalamnya tidak keras dan texturenya betul-beful spt nasi. DAN: jangan nuang susu/air dlm proses kebanyakan. Tuang sedikit2 agar bs dikira2. Kalo terlalu cair nanti jdi bubur. Selain itu, susu bisa pakai susu UHT ataupun susu bubuk yang dicairkan. Tp jangan pake condensed milk. Ini bukan es podeng.
