Chop the spring onions and pick the leaves from the coriander stalks. Peel and slice the fresh ginger in to matchsticks. Once the rice soup is ready, add the marinaded pork and continue to simmer with the lid off. Congee, called jook in China where it originated, spread throughout Southeast Asia.
Steps to make Thai rice congee with tofu:
- Add 1 cup of water and cooked rice in the saucepan, medium heat on and bring it to boil. Add 1 tbsp soysauce. Add some more water if needed. Leave it to boil for 4-5 min.
- Cut up your tofu into chunks. Use potato masher mash the tofu until it looks like mince tofu.
- Medium heat on a pan, add cooking oil then garlic. Stir well until garlic become golden then add tofu in.
- Add light soy sauce, dark soy sauce and a bit if sugar to balance the flavour. Keep stirring the tofu. Add half of spring onion and mix well.
- Put some rice congee in a bowl, add minced tofu on top. Garnish with black pepper, spring onions, coriander, chilli oil and pickle chill.
Once the rice soup is ready, add the marinaded pork and continue to simmer with the lid off. Congee, called jook in China where it originated, spread throughout Southeast Asia.
