Kemudian diamkan selama 10 menit, lalu iris setebal 1 cm. Sisihkan.
- Persiapan Hamchoi :Rendam ham choi /sawi kering dalam air selama 20 menit. Kemudian bilas dengan air mengalir sambil mebersihkan kotorannya. Peras ham choi sampai tidak ada air yg tersisa. Kemudian di iris tipis2 atau sekitar 0.5 cm. Panaskan wajan, tidak usah diberi minyak. Masukan ham choi dan 5 iris jahe, masak sampai harum. Pisahkan jahenya. Sisihkan.
- Panaskan minyak di wajan. Masukan bawang putih dan 6 iris jahe dan tumis sampai harum. Lalu masukan ham choi yg sebelumnya sudah di sangrai dengan jahe, beri 600 ml air dan bumbu2 : light soya sauce, star anise, saus tiram, angciu, dan gula. Aduk rata. Lalu masukan daging yg telah dipotong, aduk rata. Kecilkan api, didihkan selama 20 menit. Matikan api, dan koreksi rasa.
- Siapkan mangkuk kaca. Letakkan daging di dasar mangkuk, kemudian timbun dengan hamchoi. Jahe dan star anisenya tidak perlu ikut masuk ke dalam mangkuk. Kemudian kukus selama 1 jam, atau sampai daging empuk.
- Siapkan piring saji, kemudian balikan mangkuk tadi di atas piring. Sajikan. Yummm.. 😍😋
