  1. Siapkan bahan..Bilas sayur asin kering dng air sampai benar2 bersih pasir2nya👉 rendam 1 jam👉bilas,peras,tiriskan dan potong kecil2,buang ujung pangkalnya yg keras👉Tumis dng minyak sedikit hingga harum/wanginya keluar tambahkan gula pasir dan sedikit air
  2. Didihkan air👉masukkan pork belly rebus 5 menit buang airnya 👉 utk membuang kotoran2/scum yg ada di daging
  3. Ganti air rebusan dng air baru👉didihkan👉masukkan pork belly kembali rebus 30 menit👉angkat dan tiriskan..air rebusan ambil 400 ml sisihkan
  4. Marinasi pork belly dng 1 sdm kecap asin dan 1sdm dark soy sauce selama 15 menit
  5. Panaskan minyak secukupnya goreng pork belly dng posisi kulit dibawah (WARNING !!!TUTUP WAJAN…meledak2 awalnya berbahaya !!)👉Goreng sampai kering kecoklatan👉angkat 👉masukkan ke air es (spy kulitnya keriting) selama 30 menit👉tiriskan,iris pork belly 1 cm
  6. Buat BRAISE Saucenya…campur semua bahan saus tambahkan kaldu air rebusan aduk rata.
  7. Tumis bawang putih dan jahe masukkan daun bawang tumis hingga harum 👉masukkan bahan saus, pekak dan kayu manis👉test rasa tambahkan skrg jika kurang… tunggu mendidih matikan api
  8. Siapkan bowl utk mengukus👉tata pork belly atasnya lalu diatasnya tutupi tumisan sayur asinnya 👉sirami dng sausnya (saring rempahnya..taruh diatasnya…spy mudah utk diambil stlh selesai kukus👍)
  9. Panaskan panci kukus,masukkan bowl kukus selama 1 jam sampai daging empuk👉tutup
  10. Matikan api👉 sisihkan kuah sausnya di mangkuk..Saatnya Plating..👉ambil piring saji..tata sayur asinnya lalu atasnya tata samcannya (ambil jahe, pekak dan kayu manisnya👉sisihkan) 👉sirami dng sausnya beri garnish..👉 ready to serve now..👩‍🍳enjoy pemirsahh🤗🙏🏼
