- Cuci bersih samcan, buat lubang2 kecil pada kulit samcan dengan menggunakan pelunak daging (yang ujungnya paku2) atau bisa ditusuk2 dengan ujung pisau yg tajam
- Keringkan seluruh permukaan samcan dengan tissue dapur
- Posisikan kulit di bawah, lumuri bagian daging saja dengan bumbu ngohiong, bawang putih dan garam secukupnya sampai merata (termasuk bagian samping daging). Tips: jangan terlalu banyak menggunakan garam disini krn bagian kulit nanti akan asin. Bagian daging bisa dipotong memanjang sesuai ukuran yang nanti diinginkan agar lebih mudah dipotong ketika matang dan lebih menyerap bumbu, tapi jangan sampai terpotong ke kulit
- Balik samcan, posisi kulit diatas. Bungkus bagian daging dengan aluminium foil, biarkan bagian kulit terbuka
- Balur 1/2 sdt garam diatas kulit sampai keluar air dari kulit, keringkan dengan tissue dapur dan bersihkan garam. Ulangi hal yang sama menggunakan garam hingga 2-3x dengan tujuan mengeluarkan air dari kulit. Balur cuka makan diatas kulit, biarkan meresap.
- Masukkan samcan ke dalam kulkas (chiller lebih baik), biarkan kulit tetap terbuka. Tujuannya untuk mengeluarkan air / moisture dari kulit sehingga nanti kulit akan cracking sempurna. Diamkan min 6 jam, lebih baik semalamam
- Keluarkan samcan, biarkan di suhu ruangan min 30 menit sebelum dimasak. Campurkan 4-5 sdm garam dengan 1 sdm air, aduk rata. Balurkan garam basah diatas kulit samcan, buat lapisan tebal
- Masukan samcan yang terbungkus foil ke dalam AF, atur suhu AF 180° selama 30 menit
- Keluarkan samcan, bersihkan kerak garam dari kulit samcan, olesi kulit dengan minyak sedikit saja. Lepas samcan dari foil
- Masukan kembali ke AF dengan suhu 200° selama 15-30 menit (sambil dilihat jika kulit sudah craking semua dan warna sudah golden brown bisa langsung dikeluarkan dari AF)
- Resting samcan min 30 menit sebelum dipotong sesuai selera. Tips: saat resting bagian daging boleh dibungkus lagi dengan foil agar tetap juicy.
