- Cuci daging babi, potong kotak2.
- Rebus daging babi dengan 25 gr jahe yg sudah diiris tipis dan 2 batang daun bawang yg dipotongmenjadi 2 bagian. Biarkan sampai air mendidih, lalu angkat. Cuci daging dengan air biasa, sisihkan. Saya skip daun bawang soalnya lagi gak ada stok dirumah.
- Panaskan wajan teflon, beri minyak sedikit, oleskan rata dengan tissue.
- Masukkan daging babi, goreng sampai daging agak sedikit kecoklatan di tiap sisi. Kira2 3-4 menitan. Tutup wajan/teflonnya biar gak kaget kalo tiba2 meletup. 😅
- Tata sisa jahe yang sudah diiris tipis dan daun bawang di bagian bawah claypot, lalu tata daging babi diatasnya. Saya skip daun bawangnya karena lagi gak punya.
- Taruh daun salam diatas daging babi. Siram masukkan cooking wine nya. Sisihkan.
- Di bekas teflon/wajan yang untuk menggoreng daging babi tadi, masukkan gula batu. Nyalakan api, biarkan sampai gula batu meleleh.
- Gula batu akan meleleh dan berubah warna menjadi kecoklatan. Tunggu sampai ada gelembung2 diatasnya…
- Lalu langsung siramkan air secukupnya. Aduk2 sampai rata dan gula meleleh semua. Lalu angkat dan sisihkan.
- Masukkan air gula kedalam claypot sampai air menutup permukaan daging babi. Kalau air nya tidak cukup boleh ditambahkan.
- Tutup claypot dan Masak dengan api kecil selama 50 menit. (Disini tujuan kita untuk memasak daging sampai empuk)
- Setelah daging empuk, masukkan kecap asin, lalu besarkan api menjadi sedang, aduk2 pastikan tidak ada yang lengket/gosong dibagian bawah claypot. Ambil jahe dan daun bawangnya, keluarkan dr claypot. Lalu masak lagi sampai air menyusut kira2 selama 20 menit. Claypot tidak perlu ditutup. Kalau air sudah lumayan menyusut kira2 sisa 20% sudah boleh dimatikan apinya, dan siap disajikan!
