Steps to make Siobak / crispy pork belly:
- Cuci bersih samcan. Lalu keringkan sampai benar-benar kering dengan tisu dapur.
- Tusuk2 bagian kulitnya dengan alat tusuk daging atau garpu atau bisa juga dengan tusuk sate agar kulit bisa garing saat di panggang, balik samcan, lalu kerat-kerat memanjang bagian daging +/- 2 cm tapi jangan sampai putus.
- Oleskan daging dengan bumbu olesan sampai rata lalu letakkan diloyang (kulit diatas) dan beri taburan sejumput garam lalu oles dengan cuka… Diamkan di kulkas (rak paling atas) semalaman
- Panaskan oven 180 dercel. Siapkan loyang, isi sedikin air untuk menampung tetesan minyak dari daging, beri rak diatas loyang. Letakkan daging dengan posisi kulit diatas. Oleskan kulit dengan cuka lagi sebelum dipanggang. Panggang selama 55 menit api bawah saja.
- Keluarkan daging setelah 55 menit.. istirahatkan diluar dan naikan suhu oven hingga 220 dercel. oleskan kulit dengan cuka lagi. Panggang dengan api atas selama +/- 15 menit / hingga kulit garing kecoklatan. Istirahatkan selama 10 menit sebelum dipotong-potong.
