- Make ready 500 gram pork belly (samchan)
- Get 1 sdm himalayan salt (garam biasa juga boleh)
- Get 1 sdt lada
- Make ready 1 sdm paprika bubuk
- Prepare 1 sdm bawang putih bubuk
- Prepare 1 sdm bumbu Ngo Hiang
- Make ready Sambal Matah
- Take 8 siung bawang merah, iris tipis
- Make ready 1 batang sereh bagian dalam, iris tipis
- Take 1 lembar daun jeruk, iris tipis
- Get 3 buah cabe rawit, iris tipis (atau sesuai selera mau sepedas apa)
- Prepare 3 sdm minyak kelapa

Steps to make Airfried Pork Belly Sambal Matah:
- Cuci dulu pork belly di air mengalir, lalu rebus di air mendidih 5-10 menit (kulit hadap bawah), buang airnya. Keringkan pork belly dengan handuk atau tisue dapur.
- Tusuk2 seluruh bagian kulit tapi jangan sampai tembus ke daging. Bisa pakai garpu, tapi menurut saya paling gampang pakai tusuk sate. Bagian ini penting banget jadi jangan di-skip yah.
- Siapkan semua bumbu halus (garam, lada, bawang putih bubuk, paprika bubuk, ngohiang), lumuri dagin dengan bumbu, tapi jangan kena kulit. Untuk kulitnya, olesi cuka dan garam
- Tutup sisi-sisi pork belly dengan aluminium foil, tapi jangan tutup bagian kulit. Biarkan menghadap atas, masukan kulkas semalaman (atau minimal 6 jam) supaya kering.
- Setelah semalaman, keluarkan pork belly dari kulkas. Taburi kulit dengan garam, sayat2 supaya nanti motongnya lebih gampang (saya lupa proses ini jadi di foto gak ada sayatan).
- Masukan ke dalam air fryer, set ke 180°C selama 15 menit, keluarkan. Hasil setelahnya seperti di gambar (daging matang tapi kulit masih kenyal). Tusuk2 lagi bagian kulit dengan tusuk sate, sekali lagi proses tusuk2 ini penting sekali yaa, jadi jangan diskip.
- Setelah kulit ditusuk2 lagi, masukan kembali ke air fryer. Set suhu ke 200°C selama 10 menit. Lalu turunkan ke 180°C selama 10 menit lagi.
- Untuk sambal matah : iris semua bawang, cabai rawit, daun jeruk dan sereh, campur dalam mangkok dengan garam secukupnya. Panaskan minyak kelapa, lalu tuang ke mangkok, aduk2, Sajikan. Foto di bawah porsi dua orang yaa, jadinya lebih banyak utk 500gram pork belly.
