Steps to make Ayam Woku Belanga:
- Potong ayam rendam jeruk nipis dan garam, biarkan 15 mnt cuci bilas, siapkan bumbu lainnya.
- Karena aku pakai ayam potong byk lemak, taruh diwajan tanpa minyak biarkan lemaknya warna kuning keluar dibuang, jika sdh keset tambah 2 sdm minyak goreng bolak balik hingga kecoklatan, lewati tahap ini jika pakai ayam kampung/pejantan muda
- Bumbu potong kecil kecil haluskan tapi jgn lembut sekali, agak bertekstur. Tumis bumbu hingga harum dan layu, masukkan sere keprek, cabe hijau, cabe rawit, daun pandan, daun salam, daun jeruk
- Masukkan ayam, tambahkan airnya, beri garam, gula, lada, kaldu bubuk, saos tiram, rebus hingga ayam empuk. Setelah ayam empuk, bumbu menyusut, baru masukkan tomat, daun kemangi, daun bawang, aduk rata, koreksi rasa…..jadi deh..

- Noted : utk kemangi aku lebih suka tdk dicampur di wajan, tapi buat lalapan saja saat makan ayam, alasan ke2 daun kemangi cepat layu/agak hitam kalo kena panas jika ayamnya tdk habis/ada sisa kemudian dipanasi jelek tekstur daunnya kehitaman, kecuali jika masaknya sekali makan langsung habis ya, suka suka..
