The ingredients needed to make Crispy Pork Belly:
- Take 1/2 kg daging babi samcan
- Get 1 putih telur
- Take Garam kasar secukupnya (±500 gr)
- Make ready Bumbu daging
- Take 1 sdm ngohiong
- Prepare 1/4 sdt lada
- Get 1/2 sdt garam
- Get Bumbu kulit
- Prepare 1/2 sdt garam
- Make ready 1 sdm cuka
- Get Olesan panggang kulit
- Get 1 sdm cuka
Pork belly is a fresh, thick slab of meat cut from the abdomen of a pig. Once chilled, slice into thick pieces and brown until crispy to enjoy. Crispy pork belly is one of my favorite Cantonese dishes for the years in Guangdong province. After I learn how to make crispy pork belly from a Cantonese friends at home several years ago.
Steps to make Crispy Pork Belly:
- Bersihkan daging. Potong bagian daging tapi jangan sampai kena kulit, seperti foto dibawah ini:
- Olesi bagian daging dengan bumbu daging (jangan sampai kena kulit).
- Balik, keringkan kulit dengan tisu dapur sampai benar2 kering. Olesi kulit dengan bumbu kulit.
- Diamkan di kulkas chiller 24 jam (4°C) supaya bumbu meresap & kulit makin kering.
- Setelah 24 jam, panaskan oven 210°C, api atas bawah. Siapkan tray diisi air, taro di dalam oven. Nanti daging akan ditaro di atas rak nya. Air ini fungsinya supaya daging bagian bawah tetap lembut tidak keras.
- Sambil nunggu oven panas, keluarkan daging dari kulkas, lap bagian kulit dengan tisu dapur sampai kering, lalu tusuk-tusuk Kulit dengan pisau kecil tajam, sebanyak mungkin. (Kalo direnggangkan akan terlihat seperti foto dibawah ini). Lalu lap dengan tisu dapur lagi sampai benar2 kering.
- Siapkan mangkok, campur 1 putih telur dengan Garam Kasar secukupnya untuk menutupi bagian atas kulit. Olesi ke atas kulit sampai rapat dan padat. Tujuannya supaya kulit tidak gosong. (Wajib GARAM KASAR ya, jangan pake garam dapur, nanti asin karena garam halus akan meresap ke lubang kulit yg kita tusuk2 tadi, sedangkan garam kasar tidak meresap ke dalam).
- Taro daging langsung di atas rak. Panggang selama 50 menit, suhu 210°C, api atas bawah.
- Setelah 50 menit, keluarkan daging dari oven. (Oven jangan dimatikan ya, tetap dipanaskan untuk panggang berikutnya). Buang semua garam kasar yg menempel pada kulit & daging. Caranya pukul2 dengan pisau sampai gumpalan garam tersebut retak dan dapat dibuang dengan mudah. Hasilnya akan seperti foto dibawah ini:
- Sekarang saatnya membuat kulit menjadi crispy. Caranya, lap bagian kulit dg tisu dapur sampai kering, lalu oleskan dengan cuka. Panggang dalam oven dengan suhu 250°C, api atas saja, selama 10 menit.
- Setelah 10 menit, lap-lap lagi kulit sampai kering, olesi cuka lagi, oven lagi selama 5 menit. (Atau max 10 menit). (Durasi ga boleh lebih lama dari ini ya, karena nanti keras/alot).
- Kalo udah, taro daging di talenan. Diamkan dulu sampai dingin kira2 30 menit, baru boleh potong dengan pisau golok/cleaver knife. (Cara potongnya diayun pukul dulu, baru kemudian tekan hingga terpotong). Selamat mencoba, semoga berhasil.
